Our new "Fresh and Specialty Meat Case" features local River Ranches
portioned Ribeye, New York, Tenderloin, Sirloin and Ground Beef as well as
whole Prime Rib, New York Loins and Cleaned Tenderloin Roasts. We also are
featuring a selection of Columbus Brand Salame from San Francisco and fresh
cooked Veal, Buffalo and Wild Boar Bratwursts and some natural Weenies from
Continental Deli of Denver.

YOU should see the Cheese Case!!!
We now have over 35 cheeses from around the world in our cheese case priced to
move. In addition to our 3 and 6 month Spanish Manchego selections, local Sunny
Breeze Farms sheep cheeses,
Gorgonzola,
Cambazola, Boursin, Bries and Goat Cheeses, we now are carrying...Humboldt Fog,
Hoch Ybrig from Rolf Beeler, Delice de Bourgogne Triple Cream, Tête
de Moine, Zamorano, Roomano, Ubriacone, Raclette Fribourg "Grand Cru", Vacherine
Fribourg, another cheese from Rolf Beeler and many more.
New Cooking Classes
We have several new cooking classes scheduled for
December, including a "Building Ginger Bread Houses" class, which has
sold out. We still have some Holiday Appetizer Classes and our Asian II as well as a
Holiday Dinner class featuring whole roasted River Ranches Tenderloin Roast, so go to our

"Cheese of the Month"
Vacherine Fribourgeois

Vacherin Fribourgeois is a hearty and potent Swiss cow's milk cheese with a
semi-soft to firm texture, depending on age. Selected by master affineur Rolf
Beeler, Vacherin Frigourgeois is an "old fashioned" Vacherin with an uneven,
craggly rind and harsh edges. Its taste is grassy, nutty, and with the perfume
of fresh-cut hay. The flavors increase when melted, and, as such, Vacherin
Fribourgeois makes an excellent fondue cheese. Pair this cheese with Pinot Noir.
