Baby Brie with
Pomegranate Cranberry Chutney
Ingredients:
12 Baby Brie *
4 tablespoons Pomegranate Cranberry Chutney, warmed to 100 degrees *
1 baguette, sliced *
Olive Oil *
Preparation:
Preheat your oven to 400 degrees F.
Slice the baby bries in half while still chilled. Spread a half teaspoon of warm
chutney on the inside. Place the second half on top and spread another half
teaspoon of chutney on top. Set the bries on a sheet pan lined with a Silpat
sheet to prevent sticking.
Cut the baguette into 24 crostini and spray with olive oil. Put them into the
preheated oven for 2 minutes. Put the brie in the oven along with the crostini
and cook both for three more minutes.
Remove them both from the oven and serve each baked brie with two crostini.
